Winter Salad With Homemade Croutons

Take a break from comfort foods and enjoy this light, seasonal salad.

Bonus: Thanks to a nifty technique (cooking with cereal), these croutons take less time to prepare than those from your average crouton recipe.

Winter Salad With Homemade Croutons Recipe

Makes 4 servings

1 1/2 cups Kellogg's Smart Start cereal

3 tablespoons plus 1 teaspoon olive oil

1/2 teaspoon salt

1/4 teaspoon pepper

1 teaspoon grated orange zest

6 cups arugula

1 ripe pear, cored and thinly sliced

2 ounces goat cheese, crumbled

1/4 cup dried cranberries

1/4 cup chopped toasted pecans

1 tablespoon lemon juice

Recipe Directions

Combine cereal and 1 teaspoon olive oil in a zipper-lock bag and shake to coat.

Add salt, pepper and orange zest and shake again.

Set aside.

In a large salad bowl, combine arugula, pear slices, goat cheese, cranberries and pecans.

Drizzle with oil and lemon juice and toss to coat.

Sprinkle with croutons, toss again and serve.
